Thermal Processing (Heat)

UHT / Aseptic Processing

Commonly CCP
Also: ultra-high temperature · aseptic packaging · tetra-pak processing

Ultra-high temperature treatment (typically 135–150°C for 2–5 s) followed by aseptic filling into pre-sterilized packaging. Shelf-stable without refrigeration.

Typical Hazards
  • B
    Biological
Sterility breach via packaging or fill zone; biofilm in holding tube
  • C
    Chemical
    Cleaning chemical residue, foam-control agent
  • P
    Physical
Fragments from fill nozzle, packaging material
Typical Controls
  • Sterilization-in-place (SIP) of fill zone before each run
  • Holding-tube residence time validation
  • Pre-sterilization of packaging (peroxide, peroxide-UV)
  • Differential pressure on fill zone (positive)
  • Microbiological incubation testing of finished product
