Environmental Monitoring Program (EMP)

Prerequisite
Also: env mon · Listeria swabbing · Zone 1-4 swabbing

Routine swabbing of food-contact and non-food-contact surfaces and air for pathogen indicators (Listeria spp., Salmonella, Cronobacter). Mandatory in any RTE facility.

    Niche-harborage of environmental pathogens, particularly L. monocytogenes
Typical Controls
  • Risk-based sampling plan (Zone 1–4)
  • Defined corrective action for any positive (vector swabbing, intensified cleaning)
  • Trend analysis on rolling basis
  • Annual review of sampling plan
