Holding refrigerated raw materials, in-process product, or finished goods at 4°C / 40°F or below to suppress mesophilic pathogen growth.

  • Calibrated thermometers in coldest zone
  • Segregation of raw, in-process, finished, RTE, allergen products
  • Alarm at upper limit with escalation procedure
  • Defrost and condensate-control schedule
