Principle 6 Establish verification procedures

Verification and auditing methods, procedures and tests — including random sampling and analysis — can be used to determine if the HACCP system is working correctly. The frequency of verification should be sufficient to confirm that the HACCP system is working effectively.

Verification activities include: review of HACCP plan and records; review of deviations and product dispositions; confirmation that CCPs are kept under control; validation of critical limits to confirm they are adequate to control hazards (e.g. challenge studies, scientific literature, expert advice).

Validation is conducted at the beginning of a HACCP plan and after changes that affect the system. Reanalysis (revalidation) is conducted periodically and whenever significant changes occur in the product or process.
